Removal is lossless: photos aren't re-compressed, audio isn't re-encoded, and PDF and Office content is copied as it is. JPEG orientation is stored in EXIF, so a phone photo can appear rotated after cleaning.

The document properties: author, last modified by, title, subject, keywords, dates, company and manager. Comments and tracked-change authors inside the document aren't changed.
Phones store rotation in EXIF. Removing EXIF removes it too, so rotate the image if needed.
